    Last year, my daughter and son-in-law chose Nicaragua for their destination wedding at the Pelican Eyes Resort.
    Friends and family stayed at the resort the week of the wedding and had a chance to relax and explore both the resort and the town of San Juan Del Sur. It was an incredible week, VERY affordable and enjoyable. The staff were great, the food was delicious, the villas gorgeous inside and out and the resort is picturesque with a wonderful view of the bay.
    I would definitely visit both the resort and the country again.

And we’re wondering how to go about arranging everything without staying at an actual resort ( we intend on staying in hostels and visiting different cities and corn island) and we don’t want to be tied down in one place.
